Today our spotlight is on  Ga Kenkey

 

 

Kenkey (also known as kɔmi, otim,  is a staple swallow food from the Ga and Fante-inhabited regions of West Africa, usually served with pepper crudaiola and fried fish, soup or stew.

 

Kenkey is produced by steeping grains of maize in water for about one week, before they are then milled and kneaded with water into a dough wh.The dough is allowed to ferment for four days to a week before part of the dough is cooked.

 

Ga Kenkey is a fermented corn dough made into balls by wrapping them in corn husks and steaming to cook. It is a popular food in the capital city of Ghana, Accra. Ga, is the local name for Accra hence the name Ga-Kenkey.

Kenkey is usually served with hot pepper sauce and shito. Kenkey is usually served with varieties of fish or any protein of choice.

 

Here are few health benefits of kenkey

 

1. Kenkey is made up of complex carbohydrates, low protein, low fat and high fiber content.
2. The meal is rich in phosphorus, manganese, zinc, calcium, magnesium, selenium and iron.
3. Kenkey also has antioxidants and phytochemicals like lutein, zeaxanthin, anthocyanin, caffeic acid, vanillic acid, protocatechuic acid, syringic acid, beta-carotene, coumaric acid, ferulic acid etc.
4. Kenkey has an impressive combination of antioxidants and phytochemicals which helps to protect the body from oxidative stress or the ravages of free radicals. These, in turn, protect the body from heart disease, diabetes, and cancer.
